Update a voice assistant

Partial. Fields you do not send are left alone — including provider and credential_id, which is why changing only the model still validates against the right vendor and the right key.

One exception, and it is deliberate: sending credential_id: null MOVES the assistant onto platform credit. Absent means "unchanged"; explicitly null means "run this on the operator's key".
